German Liverpate comes from the tradition of home slaughterhouses where as many pig parts as possible were used to make food in order to avoid wasting food. This holistic utilization is also referred to as “nose-to-tail”.
The liver content and the added spices are decisive for the taste. The more liver it contains, the more bitter the sausage tastes, so a liver content of over 35% is rarely the case.
